Easy Stuffed Potatoes

This is another post dedicated to my love of potatoes. These are stuffed with seasoned meat and baked in the oven.


I admit, this is not the most photogenic dish. But it more than makes up for it in flavour. You will not be able to stop at just one 😉

My mom makes this dish for me whenever I come to visit her (my parents live in Ottawa while I am in Toronto) and it is only recently that I have cooked it for the first time on my own. Why did I wait for so long? All because I did not have my mom’s spiral potato corer, a nifty little tool that she wisely brought to Canada all the way from Ukraine (I hope she leaves it for me in her will). It takes out the middle of the potato while leaving a beautiful curl of the vegetable’s middle behind. I have searched high and low for it and could not find such a thing anywhere in Toronto, so I had to settle for an apple corer; it does that job, but the result in not nearly as pretty. Thankfully, the shape of the potato’s middle does not impact the wonderful flavour of this dish.


This dish has very few ingredients in it

The ingredients (serves 6-8)

  • 10 medium potatoes (I used Yukon Gold), peeled and cored
  • 1/2 lbs Italian sausage meat
  • 1/2 lbs ground beef
  • 1 cup heavy cream
  • 1.5 cups water
  • 3-4 bay leaves
  • Salt and black pepper to taste
  • 1 tsp Vegeta (optional)

The steps

  1. Preheat the oven to 375F
  2. Mix sausage meat with ground beef
  3. Stuff the meat mixture into potatoes
  4. Form any leftover meat into meatballs
  5. Arrange potatoes, potato middles and meatballs in a oven proof dish with a tight lid (I used my cast iron Le Creuset pot)
  6. Pour in cream and water ensuring that the potatoes are nearly covered in liquid; add more water if necessary
  7. Season with salt, pepper and Vegeta (if using)
  8. Drop in bay leaves
  9. Cover with the lid and bake for 20 mins
  10. Remove the lid and bake for another 40 mins until potatoes are cooked and their tops are golden brown
  11. Serve with the sauce spooned over potatoes and meatballs

Apple corer does the job. Pineapple corer will work as well. Do you like my potato pyramid?
